Ingredients

¼ cup cottage cheese (blended smooth)

1 egg

2 tbsp oat flour (or almond flour for lower carbs)

2 tbsp finely diced apple (peeled if you like)

1 tsp maple syrup or honey (optional, adjust to taste)

½ tsp cinnamon

¼ tsp baking powder

Pinch of nutmeg

Pinch of salt

Optional Topping:

A dollop of Greek yogurt with a drizzle of maple syrup + a sprinkle of cinnamon

Blend cottage cheese until smooth. In a microwave-safe mug, whisk together cottage cheese, egg, maple syrup, and vanilla (if using).

Step 2: Add Dry Ingredients

Stir in oat flour, baking powder, cinnamon, nutmeg, and salt until combined. Fold in the diced apple pieces.

Step 3: Cook

Microwave for 60–90 seconds, just until fluffy and set in the middle.

Step 4: Top & Enjoy

Add Greek yogurt and an extra dusting of cinnamon for cozy apple pie vibes.
