Ingredients
1 cup unsweetened applesauce
¾ cup plain Greek yogurt
2 tbsp maple syrup or honey
1 tsp vanilla extract
1 ½ cups rolled oats
1 tsp ground cinnamon
½ tsp baking powder
¼ tsp salt
½ cup finely diced apples
¼ cup chopped pecans or walnuts (optional)
Instructions
Step 1: Preheat oven to 350°F (175°C). Line an 8×8″ pan with parchment.
Step 2: In a large bowl, mix applesauce, Greek yogurt, maple syrup, and vanilla.
Step 3: Stir in oats, cinnamon, baking powder, and salt. Fold in apples and nuts.
Step 4: Spread batter evenly into the pan. Bake 25–30 min, until set and golden.
Step 5: Cool completely, then slice into bars. Store in fridge up to 5 days.
Notes
Use spiced applesauce for even more fall flavor.
