Ingredients

½ cup fresh or frozen blueberries (plus extra for topping)
Zest of ½ a lemon
Instructions
Preheat oven to 350°F (175°C). Grease or line a mini muffin pan.
Mix wet ingredients: In a bowl, whisk cottage cheese, eggs, vanilla, maple syrup (if using), and lemon zest until smooth.
Add dry ingredients: Stir in almond flour, baking powder, and salt until fully combined.
Fold in blueberries: Gently mix in blueberries, reserving a few for topping.
Fill muffin pan: Spoon batter into cups, filling each about ¾ full. Top with reserved blueberries.
Bake: Bake for 15–18 minutes, until golden and set in the middle.
