Description

These soft and fluffy Cinnamon Apple Cottage Cheese Pancake Bites are packed with protein, cozy cinnamon flavor, and sweet apple chunks. Quick to make in the air fryer or oven—perfect for a healthy breakfast or snack on the go!


Ingredients

½ cup (120g) cottage cheese

1 egg

1 small apple, peeled and finely chopped

¼ cup oat flour (or almond flour for low-carb)

½ teaspoon baking powder

½ teaspoon ground cinnamon

12 teaspoons maple syrup or honey (optional, for sweetness)

Pinch of salt


Instructions

Step 1: Prepare the Batter

In a blender or mixing bowl, combine cottage cheese, egg, oat flour, baking powder, cinnamon, maple syrup, and salt.

Blend or mix until smooth.

Gently fold in the chopped apple.

Step 2: Fill the Molds

Lightly grease a silicone mini muffin pan or use parchment liners.

Spoon the batter evenly into the molds, filling each about ¾ full.

Step 3: Cook (Air Fryer or Oven)

For Air Fryer:

Preheat to 300°F (150°C) if needed. Air fry for 10–12 minutes, or until golden and set.

For Oven:

Preheat to 350°F (175°C) and bake for 15–18 minutes, or until a toothpick comes out clean.

Let them cool for a few minutes before removing from the molds.
