Ingredients
4 tablespoons almond flour
2 tablespoons shredded coconut
1 large egg
2 tablespoons milk (dairy or plant-based)
1 tablespoon honey or maple syrup
½ teaspoon baking powder
½ teaspoon vanilla extract
A pinch of salt
Optional toppings: extra shredded coconut, almond slices, chocolate chips, or fresh berries.
Instructions
Mix the ingredients – In a large microwave-safe mug, whisk together the egg, honey, and vanilla extract. Add almond flour, shredded coconut, milk, baking powder, and a pinch of salt. Stir until smooth and well combined.
Cook the mug cake – Place the mug in the microwave and cook for 90 seconds to 2 minutes, until the cake rises and feels firm to the touch.
Serve and enjoy – Let the mug cake cool for 2 minutes, then top with shredded coconut or almond slices and enjoy warm.
Notes
Add 1 tablespoon extra milk for a moister cake.
For a vegan version: use flax egg (1 tbsp flaxseed + 3 tbsp water) and plant-based milk. Replace honey with maple syrup.
