Description

Quick, fluffy, and flourless! This Coconut & Almond Mug Cake – Quick, Fluffy, and Flourless is ready in just 2 minutes and made with wholesome ingredients like almond flour, coconut, and honey. Perfect for a fast, healthy sweet fix.

 

Ingredients

  • 4 tablespoons almond flour

  • 2 tablespoons shredded coconut

  • 1 large egg

  • 2 tablespoons milk (dairy or plant-based)

  • 1 tablespoon honey or maple syrup

  • ½ teaspoon baking powder

  • ½ teaspoon vanilla extract

  • A pinch of salt

Optional toppings: extra shredded coconut, almond slices, chocolate chips, or fresh berries.


Instructions

  • Mix the ingredients – In a large microwave-safe mug, whisk together the egg, honey, and vanilla extract. Add almond flour, shredded coconut, milk, baking powder, and a pinch of salt. Stir until smooth and well combined.

  • Cook the mug cake – Place the mug in the microwave and cook for 90 seconds to 2 minutes, until the cake rises and feels firm to the touch.

 

  • Serve and enjoy – Let the mug cake cool for 2 minutes, then top with shredded coconut or almond slices and enjoy warm.

Notes

  • Add 1 tablespoon extra milk for a moister cake.

  • For a vegan version: use flax egg (1 tbsp flaxseed + 3 tbsp water) and plant-based milk. Replace honey with maple syrup.

  • Try variations with chocolate chips, blueberries, or chopped dates.
