High-protein Cottage Cheese Banana Bread Mug Cake – gluten-free, fluffy, and ready in 2 minutes. Perfect healthy breakfast or snack!


Ingredients

  • ¼ cup cottage cheese

  • ½ ripe banana, mashed

  • 1 egg

  • 1 tbsp almond flour (or oat flour for softer texture)

  • ½ tsp vanilla extract

  • ¼ tsp cinnamon

  • ½ tsp baking powder

  • Pinch of salt

  • Optional: 1 tsp maple syrup or honey, chopped walnuts, or dark chocolate chips


Instructions

  1. Mash & Mix

    • Mash the ripe banana in a mug or small bowl.

    • Add cottage cheese, egg, vanilla, cinnamon, and optional sweetener. Stir until smooth.

  2. Add Dry Ingredients

    • Mix in almond flour, baking powder, and a pinch of salt.

    • Fold in optional nuts or chocolate chips.

  3. Cook

    • Microwave: Heat on high for 1½–2 minutes, until the top is set and springy.

    • Oven Option: Bake in a greased ramekin at 350°F (175°C) for 15–18 minutes.

  4. Serve & Enjoy

    • Let it cool for 1 minute. Add toppings like almond butter, banana slices, or a sprinkle of cinnamon sugar.

Notes

  • For stronger banana flavor, add a few slices on top before cooking.

  • Double the recipe to make 2 servings in a larger ramekin.
