High-protein Cottage Cheese Banana Bread Mug Cake – gluten-free, fluffy, and ready in 2 minutes. Perfect healthy breakfast or snack!
Ingredients
¼ cup cottage cheese
½ ripe banana, mashed
1 egg
1 tbsp almond flour (or oat flour for softer texture)
½ tsp vanilla extract
¼ tsp cinnamon
½ tsp baking powder
Pinch of salt
Optional: 1 tsp maple syrup or honey, chopped walnuts, or dark chocolate chips
Instructions
Mash & Mix
Mash the ripe banana in a mug or small bowl.
Add cottage cheese, egg, vanilla, cinnamon, and optional sweetener. Stir until smooth.
Add Dry Ingredients
Mix in almond flour, baking powder, and a pinch of salt.
Fold in optional nuts or chocolate chips.
Cook
Microwave: Heat on high for 1½–2 minutes, until the top is set and springy.
Oven Option: Bake in a greased ramekin at 350°F (175°C) for 15–18 minutes.
Serve & Enjoy
Let it cool for 1 minute. Add toppings like almond butter, banana slices, or a sprinkle of cinnamon sugar.
Notes
For stronger banana flavor, add a few slices on top before cooking.
