Cozy, high-protein breakfast casserole made with cottage cheese, bananas, oats, and cinnamon. Naturally sweetened and perfect for meal prep.
Ingredients
1 cup cottage cheese
2 ripe bananas, mashed
2 large eggs
1 ½ cups rolled oats
1 tsp cinnamon
1 tsp vanilla extract
2 tbsp honey or maple syrup (optional)
1 tsp baking powder
Pinch of salt
Instructions
Step 1: Preheat & Prep
Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
Step 2: Mix Wet Ingredients
In a large bowl, combine cottage cheese, mashed bananas, eggs, vanilla extract, and honey (if using). Stir until smooth.
Step 3: Add Dry Ingredients
Add oats, cinnamon, baking powder, and salt. Mix until fully incorporated.
Step 4: Bake
Pour batter into the prepared dish and spread evenly. Bake for 30–35 minutes until set and lightly golden on top.
Step 5: Cool & Serve
Let cool for 10 minutes before slicing. Serve warm or cold—delicious either way!
Notes
For extra texture, add chopped nuts or raisins.
Use ripe bananas for natural sweetness.
Store leftovers in the fridge up to 3 days.
