Description

These moist and tender Cottage Cheese Carrot Cake Bars are a wholesome twist on a classic dessert — packed with protein, naturally sweetened, and perfect for breakfast, snacks, or meal prep.


Ingredients

1 cup cottage cheese

2 large eggs

½ cup almond flour (or oat flour for a heartier texture)

12 tbsp maple syrup or honey (optional for added sweetness)

1 tsp vanilla extract

1 tsp cinnamon

½ tsp nutmeg (optional)

½ tsp baking powder

Pinch of salt

1 cup grated carrots

¼ cup chopped walnuts or pecans (optional)


Instructions

Step 1: Preheat & Prep

Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.

Step 2: Mix the Base

In a bowl, whisk together cottage cheese, eggs, maple syrup (if using), and vanilla extract until smooth. Add almond flour, baking powder, cinnamon, nutmeg, and salt. Stir until fully combined.

Step 3: Add Carrots & Nuts

Fold in grated carrots and chopped nuts until evenly distributed.

Step 4: Bake

Pour the batter into the prepared baking dish and smooth the top. Bake for 25–30 minutes, or until set in the center and lightly golden. A toothpick should come out mostly clean.

Step 5: Cool & Serve

Let it cool for 10 minutes before slicing. Serve warm or chilled — perfect as a protein-packed breakfast or snack!
