Ingredients

  • 1 cup cottage cheese

  • 2 large eggs

  • ½ cup pumpkin puree

  • ¼ cup almond flour

  • 23 tbsp sweetener of choice

  • 1 tsp pumpkin pie spice

  • ½ tsp vanilla extract

  • Pinch of salt

  • Optional: nuts or chocolate chips


Instructions

  • Preheat oven to 350°F (175°C). Blend cottage cheese, eggs, pumpkin, sweetener, spices, and vanilla. Stir in flour.

  • Pour batter into lined baking dish, add toppings.

  • Bake 15–18 minutes until golden.
