Description

Warm, cozy, and gluten-free, these Flourless Apple Cinnamon Muffins are naturally sweetened with bananas and packed with apples, oats, and protein for the perfect breakfast or snack.


Ingredients

2 medium apples, peeled and finely chopped

2 large eggs

2 ripe bananas, mashed (for natural sweetness)

1 cup rolled oats (gluten-free if needed)

½ cup cottage cheese (or Greek yogurt)

1 tsp vanilla extract

1 tsp cinnamon

1 tsp baking powder

Pinch of salt

Optional: 1–2 tsp honey or maple syrup for extra sweetness


Instructions

Step 1: Preheat & Prep

Preheat oven to 350°F (175°C). Line or grease a muffin tin.

Step 2: Blend the Base

In a blender or food processor, combine bananas, eggs, cottage cheese, vanilla, and honey (if using). Blend until smooth.

Step 3: Add Dry Ingredients

Stir in oats, baking powder, cinnamon, and salt until well combined.

Step 4: Fold in Apples

Gently fold in the chopped apples, saving a few small pieces to sprinkle on top of each muffin.

Step 5: Bake

Divide the batter evenly into the muffin tin. Bake for 20–24 minutes, or until a toothpick comes out clean and tops are lightly golden.

Step 6: Cool & Serve

Let muffins cool for a few minutes before removing. Enjoy warm or at room temperature — perfect with coffee or tea!
