Description
Soft, chewy, and protein-packed bagels made with cottage cheese instead of flour! These fluffy bagels are light, gluten-free, and perfect for breakfast sandwiches or a guilt-free snack.
Ingredients
(makes 4 bagels):
1 cup cottage cheese
2 large eggs
1 cup almond flour (or oat flour)
1 ½ tsp baking powder
Pinch of salt
Optional: Everything Bagel seasoning for topping
Instructions
Step 1: Blend
Add cottage cheese and eggs to a blender and process until smooth.
Step 2: Mix
In a bowl, whisk almond flour, baking powder, and salt. Stir in the cottage cheese mixture until you have a thick dough.
Step 3: Shape
Divide the dough into 4 portions. Roll each into a ball, poke a hole in the center, and shape into bagels.
Step 4: Bake
Place on a lined baking sheet, sprinkle with Everything Bagel seasoning (if using), and bake at 375°F (190°C) for 20–25 minutes, until golden and fluffy.
Notes
Toast them before serving for that perfect bagel bite.
Store leftovers in the fridge for up to 3 days or freeze for later.
