Description

This incredibly soft and satisfying cottage cheese bread is low-carb, high-protein, and gluten-free! With just 3g net carbs per slice, it’s the perfect keto-friendly bread for toast, sandwiches, and more.


Ingredients

1 cup cottage cheese

4 large eggs

1 cup almond flour (blanched, super-fine)

1 tbsp baking powder

1/4 tsp salt

1 tbsp olive oil (plus more for greasing)


Instructions

Preheat your oven to 350°F (175°C). Lightly grease a standard 8×4 inch loaf pan or line it with parchment paper.

In a blender or food processor, combine the cottage cheese, eggs, and 1 tablespoon of olive oil. Blend on high until the mixture is completely smooth.

Pour the blended mixture into a large mixing bowl. Add the almond flour, baking powder, and salt. Gently fold everything together with a spatula until just combined. Be careful not to overmix.

Transfer the batter to the prepared loaf pan and smooth the top with the spatula.

Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. This is crucial for easy slicing!
