Description

These Fluffy Cottage Cheese Pancake Bites are light, protein-packed, and naturally gluten-free. Perfect for breakfast, meal prep, or a guilt-free snack the whole family will love.


Ingredients

1 cup cottage cheese

2 large eggs

¼ cup almond flour (or oat flour for a softer bite)

1 tsp vanilla extract

12 tbsp honey or maple syrup (optional for sweetness)

½ tsp baking powder

Pinch of salt

Optional toppings: fresh berries, nut butter, or a drizzle of honey


Instructions

Step 1: Preheat & Prep

Preheat your oven to 350°F (175°C). Line a mini muffin tin with silicone liners or lightly grease it.

Step 2: Mix the Batter

In a bowl, whisk together cottage cheese, eggs, vanilla, and honey/maple syrup until smooth. Add almond flour, baking powder, and salt. Stir until fully combined.

Step 3: Fill the Muffin Tin

Spoon the batter evenly into the prepared mini muffin tin, filling each cup about ¾ full.

Step 4: Bake

Bake for 15–18 minutes, or until lightly golden on top and a toothpick inserted in the center comes out mostly clean.

Step 5: Cool & Serve

Let them cool for a few minutes before removing from the tin. Serve warm or at room temperature with your favorite toppings!
