This fluffy, light-as-air cloud bread is a high-protein, gluten-free delight made with cottage cheese and just 6 simple ingredients. Perfect for keto-friendly sandwiches or snacking any time of day.
Ingredients
½ cup cottage cheese
3 large eggs, separated
¼ tsp cream of tartar
Pinch of salt
Optional: ¼ tsp garlic powder or Italian herbs for flavor
Instructions
Step 1: Preheat & Prep
Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
Step 2: Whip the Egg Whites
In a clean bowl, beat egg whites with cream of tartar and a pinch of salt until stiff peaks form.
Step 3: Blend the Base
In another bowl, blend cottage cheese with egg yolks until smooth. Add any optional seasonings you like.
Step 4: Fold & Shape
Gently fold the egg white mixture into the cottage cheese mixture in batches, keeping it light and airy.
Spoon into 6 rounds on the prepared baking sheet and smooth the tops.
Step 5: Bake
Bake for 25–30 minutes, or until golden and set. The bread should feel light and slightly crisp on the outside.
Step 6: Cool & Serve
Let cool on a wire rack. Use as sandwich bread, burger buns, or enjoy on their own!
Notes
For an extra smooth texture, blend cottage cheese before mixing.
Store in an airtight container in the fridge for up to 3 days.
To enjoy again, simply re-toast or warm in the oven to crisp them back up.
