Description

Fluffy, protein-packed Pumpkin Spice Cottage Cheese Pancake Bites made with cottage cheese, pumpkin puree, and warm spices. A cozy, low-sugar snack or breakfast treat!


Ingredients

1 cup cottage cheese

2 large eggs

½ cup pumpkin puree (canned or fresh)

½ tsp vanilla extract

1 tsp pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)

¼ cup almond flour (or oat flour for softer texture)

12 tsp honey or maple syrup (optional for added sweetness)

Pinch of salt


Instructions

Step 1: Preheat & Prep

Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with silicone liners.

Step 2: Mix the Base

In a bowl, whisk together cottage cheese, eggs, pumpkin puree, vanilla, honey (if using), and pumpkin pie spice until smooth. Add almond flour and a pinch of salt, stirring until fully combined.

Step 3: Bake

Spoon the batter into the prepared muffin tin. Bake for 18–22 minutes, or until lightly golden and set in the center. A toothpick inserted should come out mostly clean.

Step 4: Cool & Serve
