Ingredients
1 cup cottage cheese
2 large eggs
½ cup oat flour (or almond flour for gluten-free)
1 tbsp honey or maple syrup (optional)
1 tsp vanilla extract
½ tsp baking powder
½ cup fresh strawberries, diced
Instructions
Step 1: Preheat & Prep
Preheat oven to 350°F (175°C) and grease or line a mini muffin tin.
Step 2: Mix Wet Ingredients
In a bowl, whisk together cottage cheese, eggs, vanilla, and honey (if using).
Step 3: Add Dry Ingredients
Stir in oat flour and baking powder until smooth.
Step 4: Fold in Strawberries
Gently fold in diced strawberries.
Step 5: Bake
Spoon the batter into the muffin tin and bake for 15–18 minutes, until fluffy and golden.
Step 6: Cool & Enjoy
Let cool slightly before removing from the pan. Serve warm or store for later.
