Description

A wholesome, no-sugar, no-flour apple oat cake made with grated apples, oats, and warm cinnamon. Perfect for breakfast or snacking.


Ingredients

  • 2 medium apples, grated (with skin)
  • 1 cup rolled oats
  • 2 eggs
  • 1/2 cup plain unsweetened yogurt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract (optional)
  • Handful of chopped walnuts (optional)


Instructions

  1. Preheat oven to 350°F and grease or line a loaf pan.
  2. Mix grated apples, yogurt, and eggs in a large bowl.
  3. Add oats, cinnamon, baking powder, vanilla, and walnuts if using.
  4. Stir until fully combined.
  5. Pour into prepared pan and smooth the top.
  6. Bake 30–35 minutes until a toothpick comes out clean.
  7. Cool in pan 10 minutes, then transfer to a rack.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze slices for longer storage.
