Description

Soft, no-sugar-added banana bars packed with 8 g protein each. Perfect for meal prep and healthy snacking.


Ingredients

  • 2 cups cottage cheese
  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • 2 large eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ cup chopped walnuts (optional)


Instructions

  1. Preheat oven to 350 °F and line an 8×8-inch pan with parchment.
  2. Blend cottage cheese until smooth; mix with bananas, eggs, vanilla, and cinnamon.
  3. Stir in oats and baking powder; fold in walnuts if using. Rest 5 minutes.
  4. Spread batter in pan and bake 25–30 minutes until golden.
  5. Cool 10 minutes, lift out, and slice into 12 bars.

Notes

Use very ripe bananas for maximum sweetness. Store in the fridge up to 5 days or freeze up to 2 months.
