Description

Warm, high-protein berry crumble bowls that taste like dessert for breakfast.


Ingredients

  • 1½ cups cottage cheese
  • 2 large eggs
  • ½ cup almond flour
  • 1 cup mixed berries
  • ¼ cup rolled oats
  • 2 tbsp honey
  • ½ tsp vanilla extract


Instructions

  1. Preheat oven to 375 °F and grease six ramekins.
  2. Whisk cottage cheese, eggs, honey, and vanilla until smooth.
  3. Divide mixture evenly among ramekins.
  4. Stir almond flour and oats together for the crumble.
  5. Sprinkle crumble over each bowl and top with berries.
  6. Bake 18–20 minutes until topping is golden.
  7. Rest 5 minutes and serve warm.

Notes

Use full-fat cottage cheese for best texture. Frozen berries work straight from the freezer. Leftovers keep four days in the fridge.
