Cajun Alfredo Cottage Cheese Sauce

Description

Creamy, spicy, high-protein pasta sauce made with cottage cheese and bold Cajun seasoning.


Ingredients

  • 8 oz high-protein pasta
  • 16 oz low-fat cottage cheese
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup 2% milk
  • 1 garlic clove, peeled
  • 1 tbsp Cajun seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Cook high-protein pasta al dente according to package directions, minus 1 minute. Reserve 1/2 cup pasta water, then drain.
  2. Add cottage cheese, parmesan, milk, garlic, and Cajun seasoning to a blender. Blend on high for 60 seconds until completely smooth.
  3. Return pasta to the pot over low heat. Pour in the blended sauce and toss gently for 1-2 minutes.
  4. Add reserved pasta water, 1 tablespoon at a time, until the sauce reaches desired creaminess. Do not boil.
  5. Season with salt and pepper to taste. Garnish with fresh parsley and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator up to 4 days. Reheat gently with a splash of milk to restore creaminess.
