Description
Juicy, golden chicken patties packed with protein and fresh herbs. Ready in 20 minutes for an easy weeknight dinner.
Ingredients
- 1 medium zucchini, grated
- 1 lb ground chicken
- 1 large egg, beaten
- 1/2 cup cottage cheese
- 2 cloves garlic, minced
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 2 tbsp chopped fresh dill
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 tbsp oil, for cooking
Instructions
- Grate zucchini and squeeze out all liquid using a clean towel.
- In a large bowl, combine zucchini, ground chicken, egg, cottage cheese, garlic, lemon zest, lemon juice, dill, onion powder, salt, and pepper.
- Mix gently until just combined. Divide into 8 portions and shape into ¾-inch thick patties.
- Heat oil in a large skillet over medium heat. Add patties in a single layer.
- Cook 4–5 minutes per side until golden and internal temperature reaches 165 °F.
- Transfer to a paper-towel-lined plate. Repeat with remaining patties. Serve hot.
Notes
For extra-crispy edges, chill formed patties 15 minutes before cooking. Leftovers reheat beautifully in a skillet or 350 °F oven.
