Description
Protein-packed baked oats with cocoa, fresh raspberries, and melty dark chocolate chips. A healthy breakfast that tastes like dessert.
Ingredients
- 2 cups cottage cheese
- 1 cup rolled oats
- 1 cup raspberries (fresh or frozen)
- 2 large eggs
- 2 tbsp unsweetened cocoa powder
- 1/3 cup honey
- 1/4 cup dark chocolate chips
- 1 tsp vanilla extract
- 1/2 tsp baking powder
Instructions
- Preheat oven to 350°F and lightly grease an 8-inch square baking dish.
- Blend cottage cheese, eggs, honey, vanilla, and cocoa powder until completely smooth.
- Stir in rolled oats and baking powder. Gently fold in ¾ cup raspberries and half the chocolate chips.
- Pour batter into prepared dish. Scatter remaining raspberries and chocolate chips on top.
- Bake 35–40 minutes until center is set and edges are lightly golden.
- Cool 10 minutes before slicing. Serve warm for melty chocolate.
Notes
Frozen raspberries work perfectly—no need to thaw. Use 85% dark chocolate chips for less sugar. Leftovers keep up to four days in the fridge.
