Description

Protein-packed baked oats with cocoa, fresh raspberries, and melty dark chocolate chips. A healthy breakfast that tastes like dessert.

Ingredients

  • 2 cups cottage cheese
  • 1 cup rolled oats
  • 1 cup raspberries (fresh or frozen)
  • 2 large eggs
  • 2 tbsp unsweetened cocoa powder
  • 1/3 cup honey
  • 1/4 cup dark chocolate chips
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder

Instructions

  1. Preheat oven to 350°F and lightly grease an 8-inch square baking dish.
  2. Blend cottage cheese, eggs, honey, vanilla, and cocoa powder until completely smooth.
  3. Stir in rolled oats and baking powder. Gently fold in ¾ cup raspberries and half the chocolate chips.
  4. Pour batter into prepared dish. Scatter remaining raspberries and chocolate chips on top.
  5. Bake 35–40 minutes until center is set and edges are lightly golden.
  6. Cool 10 minutes before slicing. Serve warm for melty chocolate.

Notes

Frozen raspberries work perfectly—no need to thaw. Use 85% dark chocolate chips for less sugar. Leftovers keep up to four days in the fridge.
