Ingredients

  • 1 1/2 cups full-fat cottage cheese
  • 3 large eggs
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup oat flour (or almond flour)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup chopped strawberries, plus extra for topping


Instructions

  1. Preheat oven to 350 °F and grease four 8-ounce ramekins.
  2. Blend cottage cheese until smooth, about 30 seconds.
  3. Whisk in eggs, honey, and vanilla until combined.
  4. Stir in oat flour, baking powder, cinnamon, and salt.
  5. Gently fold in chopped strawberries.
  6. Divide batter among ramekins and top with extra berries.
  7. Bake 22-25 minutes until centers are just set.
