Description

Creamy, fruity, naturally sweet breakfast bowls packed with 20 g protein each. Perfect for meal prep and ready in under 40 minutes.


Ingredients

  • 1 cup cottage cheese (240 g)
  • 2 large eggs
  • ½ cup almond flour or rolled oats (50 g almond flour)
  • 1 tsp vanilla extract
  • 23 tbsp honey or maple syrup (optional)
  • ½ tsp baking powder
  • Pinch of salt
  • 1 cup chopped strawberries (150 g)


Instructions

  1. Preheat oven to 350 °F and grease four 8-oz ramekins.
  2. Blend cottage cheese, eggs, vanilla, sweetener, baking powder, and salt until smooth.
  3. Fold in almond flour or oats, then gently stir in strawberries.
  4. Divide batter among ramekins and top with reserved strawberry slices.
  5. Bake 25–30 minutes until set. Cool 10 minutes before serving or storing.

Notes

Store covered in the fridge up to 5 days or freeze up to 2 months. Reheat 30–45 seconds in the microwave.
