Description

Juicy chicken breasts rolled around a creamy cottage cheese, spinach, and sun-dried tomato filling, then baked until golden.


Ingredients

  • 2 large chicken breasts (about 1.5 lb total)
  • 1 cup cottage cheese
  • ½ cup fresh spinach, wilted and chopped
  • ¼ cup sun-dried tomatoes, chopped
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp salt (optional)
  • ¼ tsp black pepper


Instructions

  1. Preheat oven to 400 °F and grease a 9×13-inch baking dish.
  2. Butterfly each chicken breast and pound to ½-inch thickness.
  3. Wilt spinach if raw, squeeze dry, and chop finely.
  4. Blend cottage cheese until smooth; mix in parmesan, garlic powder, spinach, and tomatoes.
  5. Spread filling over each breast, roll tightly, seam-side down in dish.
  6. Bake 25–30 minutes until internal temperature reaches 165 °F.
  7. Rest 5 minutes before slicing and serving.

Notes

Blend cottage cheese smooth for best texture. Add extra parmesan on top for a golden crust. Serve over pasta or salad. Store leftovers up to 3 days in the fridge.
