Description

Baked, high-protein donut holes made with cottage cheese. Ready in 25 minutes and naturally sweetened.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • ¾ cup almond flour
  • ¼ cup oat flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 tbsp coconut sugar (optional coating)
  • ½ tsp cinnamon (optional coating)


Instructions

  1. Preheat oven to 350°F and grease a mini muffin or donut-hole pan.
  2. Blend cottage cheese, eggs, maple syrup, and vanilla until smooth.
  3. Add almond flour, oat flour, baking powder, cinnamon, and salt. Pulse to combine.
  4. Scoop batter into prepared pan, filling each cavity ¾ full.
  5. Bake 18-22 minutes until tops spring back and a toothpick comes out clean.
  6. Cool 5 minutes, then roll in cinnamon-sugar if desired.

Notes

Use full-fat cottage cheese for the best texture. Store in an airtight container up to 5 days or freeze for 3 months.
