Description
Baked, high-protein donut holes made with cottage cheese. Ready in 25 minutes and naturally sweetened.
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- ¼ cup maple syrup or honey
- 1 tsp vanilla extract
- ¾ cup almond flour
- ¼ cup oat flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- Pinch of salt
- 1 tbsp coconut sugar (optional coating)
- ½ tsp cinnamon (optional coating)
Instructions
- Preheat oven to 350°F and grease a mini muffin or donut-hole pan.
- Blend cottage cheese, eggs, maple syrup, and vanilla until smooth.
- Add almond flour, oat flour, baking powder, cinnamon, and salt. Pulse to combine.
- Scoop batter into prepared pan, filling each cavity ¾ full.
- Bake 18-22 minutes until tops spring back and a toothpick comes out clean.
- Cool 5 minutes, then roll in cinnamon-sugar if desired.
Notes
Use full-fat cottage cheese for the best texture. Store in an airtight container up to 5 days or freeze for 3 months.
