Description

High-protein, juicy, and easy to bake in under an hour. This cottage cheese loaf delivers nine grams of protein per slice with natural strawberry sweetness.


Ingredients

  • 2 cups cottage cheese
  • 1 cup fresh strawberries, chopped
  • 3 large eggs
  • 1/2 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup almond flour


Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  2. In a large mixing bowl, blend cottage cheese and eggs until smooth.
  3. Stir in honey, vanilla extract, baking soda, salt, and almond flour until well combined. Gently fold in chopped strawberries.
  4. Pour the batter into the prepared loaf pan and bake for 35-40 minutes, or until a toothpick inserted comes out clean.
  5. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.

Notes
