Ingredients
- 2 cups cottage cheese
- 1 cup fresh strawberries, chopped
- 3 large eggs
- 1/2 cup honey
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup almond flour
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
- In a large mixing bowl, blend cottage cheese and eggs until smooth.
- Stir in honey, vanilla extract, baking soda, salt, and almond flour until well combined. Gently fold in chopped strawberries.
- Pour the batter into the prepared loaf pan and bake for 35-40 minutes, or until a toothpick inserted comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
Notes
Use fresh strawberries for best flavor and moisture. Store leftovers in an airtight container in the fridge for up to 5 days.
