Description
Warm, protein-packed breakfast muffins made with cottage cheese, almond flour, and fresh apple. Low-sugar and gluten-free.
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- ½ cup almond flour (or oat flour)
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1–2 tsp honey or maple syrup (optional)
- 1 tsp baking powder
- Pinch of salt
- 1 medium apple, peeled, cored, chopped
Instructions
- Preheat oven to 350°F. Line muffin tin with silicone liners or grease lightly.
- Whisk cottage cheese, eggs, vanilla, and honey until smooth. Stir in almond flour, cinnamon, baking powder, and salt.
- Fold chopped apple into batter evenly.
- Spoon batter into prepared muffin cups, filling ¾ full.
- Bake 20–25 minutes until tops are golden and toothpick comes out mostly clean.
- Cool 5 minutes, then serve warm or at room temperature.
Notes
Sprinkle extra cinnamon on top before baking for added aroma. Store in fridge up to 3 days or freeze up to 2 months.
