Description

Warm, protein-packed breakfast muffins made with cottage cheese, almond flour, and fresh apple. Low-sugar and gluten-free.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup almond flour (or oat flour)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 12 tsp honey or maple syrup (optional)
  • 1 tsp baking powder
  • Pinch of salt
  • 1 medium apple, peeled, cored, chopped


Instructions

  1. Preheat oven to 350°F. Line muffin tin with silicone liners or grease lightly.
  2. Whisk cottage cheese, eggs, vanilla, and honey until smooth. Stir in almond flour, cinnamon, baking powder, and salt.
  3. Fold chopped apple into batter evenly.
  4. Spoon batter into prepared muffin cups, filling ¾ full.
  5. Bake 20–25 minutes until tops are golden and toothpick comes out mostly clean.
  6. Cool 5 minutes, then serve warm or at room temperature.

Notes

Sprinkle extra cinnamon on top before baking for added aroma. Store in fridge up to 3 days or freeze up to 2 months.
