Description

A quick, single-serve mug cake that tastes like strawberry cheesecake but packs extra protein from cottage cheese. Ready in five minutes with no oven required.


Ingredients

  • 1/2 cup cottage cheese
  • 1 large egg
  • 2 tbsp almond flour
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • 2 tbsp fresh strawberries, diced
  • 1 tbsp cream cheese


Instructions

  1. Blend cottage cheese in a small blender until completely smooth, 30-45 seconds.
  2. Transfer to a 12-ounce microwave-safe mug and add egg, almond flour, honey, and vanilla.
  3. Stir vigorously with a fork until batter is uniform and no dry streaks remain.
  4. Gently fold in most of the diced strawberries, reserving a few for topping.
  5. Drop cream cheese into the center of the batter and push slightly below surface.
  6. Microwave on high for 60-75 seconds until top is set but center still slightly jiggly.
  7. Rest for 1 minute, then top with remaining strawberries and optional honey drizzle.
  8. Enjoy immediately while warm.

Notes

Adjust microwave time based on your wattage. Start with 60 seconds and add 10-second bursts as needed. Always use a mug that holds at least 12 ounces to prevent overflow.
