Description

Thin chicken cutlets rolled around a creamy cottage cheese, mozzarella, and parmesan filling seasoned with garlic and parsley. Baked until golden and juicy in just 20 minutes.


Ingredients

  • 2 chicken breasts, sliced thin
  • 1 cup cottage cheese
  • 1/2 cup mozzarella, shredded
  • 1/4 cup parmesan, grated
  • 2 garlic cloves, minced
  • 1 tsp dried parsley
  • Salt and pepper, to taste


Instructions

  1. Preheat oven to 400 °F and line a baking sheet with parchment paper.
  2. Slice chicken breasts horizontally into thin cutlets and season both sides with salt and pepper.
  3. In a bowl, mix cottage cheese, mozzarella, parmesan, garlic, and parsley until combined.
  4. Spoon 2 tablespoons of filling onto the wide end of each cutlet and roll tightly toward the narrow end.
  5. Place roll-ups seam-side down on the prepared sheet and sprinkle extra parmesan on top.
  6. Bake 18–20 minutes until internal temperature reaches 165 °F.
  7. Rest 3 minutes, garnish with fresh parsley if desired, and serve hot.

Notes

Store leftovers in an airtight container in the fridge up to 4 days. Reheat in a 350 °F oven for 8 minutes to restore crispiness.
