Description

A moist, naturally sweetened oat cake packed with apples and carrots. Perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 cup oats, ground into oat flour
  • 2 apples, grated or pureed
  • 2 carrots, grated
  • 3 eggs (or vegan substitute)
  • 1/2 cup natural sweetener (honey, maple syrup, or dates)
  • 1 teaspoon cinnamon (optional)
  • 1 teaspoon baking powder
  • Pinch of salt
  • Optional: 1/2 cup walnuts, almonds, chia seeds, or flaxseeds


Instructions

  1. Preheat oven to 350°F (180°C). Grease or line an 8-inch square baking pan.
  2. In a large bowl, whisk together oat flour, baking powder, cinnamon, and salt.
  3. In another bowl, beat eggs, then stir in grated apples, grated carrots, and sweetener.
  4. Combine wet and dry ingredients, stirring until smooth.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake 40–45 minutes until a toothpick comes out with moist crumbs.
  7. Cool in pan 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
