Description
Fluffy, protein-packed egg bites made with cottage cheese and fresh vegetables. Perfect for meal prep and grab-and-go breakfasts.
Ingredients
- 1 cup (225g) cottage cheese
- 4 large eggs
- 1 cup (30g) fresh spinach, chopped fine
- 1/2 cup (75g) bell pepper, diced small
- 1/3 cup (20g) green onions, sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 cup (56g) shredded cheddar (optional)
Instructions
- Preheat oven to 300°F. Place a 9×13 pan filled with hot water on the lower rack. Grease a silicone muffin pan well.
- In a blender, combine cottage cheese, eggs, salt, pepper, and garlic powder. Blend 30 seconds until smooth.
- Stir in spinach, bell pepper, green onions, and cheddar by hand.
- Pour mixture evenly into 12 muffin cups, filling each 3/4 full.
- Bake 20-25 minutes until set with a slight jiggle in the center.
- Cool 5 minutes, then remove from pan. Store in the fridge up to 5 days or freeze up to 2 months.
Notes
Reheat in the microwave for 20 seconds covered with a damp paper towel. Do not overbake to avoid a rubbery texture.
