Description
Starbucks-style egg bites made at home with cottage cheese for extra protein and fluffiness. Ready in under 30 minutes and perfect for meal prep.
Ingredients
- 1 cup cottage cheese
- 4 large eggs
- 1 cup fresh spinach, chopped
- ½ cup bell pepper, diced
- ⅓ cup green onions, sliced
- ½ teaspoon salt
- ⅓ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ cup shredded cheddar or mozzarella (optional)
Instructions
- Preheat oven to 350 °F and grease a 12-cup muffin tin or line with silicone cups.
- Add cottage cheese, eggs, salt, pepper, and garlic powder to a blender. Blend 30–45 seconds until completely smooth.
- Divide spinach, bell pepper, and green onions evenly among muffin cups.
- Pour blended egg mixture over vegetables, filling each cup ¾ full. Sprinkle cheese on top if using.
- Bake 20–25 minutes until centers are set and tops are lightly golden. Cool 5 minutes before removing.
Notes
For extra flavor, add cooked bacon, ham, or mushrooms. Store in the fridge up to 5 days or freeze up to 2 months. Reheat in microwave 30–45 seconds or oven at 350 °F for 5 minutes.
