Ingredients
1 cup cottage cheese
1 large egg
1 cup almond flour
1 teaspoon baking powder
Pinch of salt
1 teaspoon garlic powder
2 tablespoons butter, melted
1 tablespoon fresh parsley, chopped, optional
2 tablespoons shredded mozzarella or Parmesan, optional for topping
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Step 2: Make the Dough
Blend the cottage cheese and egg until smooth. Pour into a bowl and add the almond flour, baking powder, salt, and garlic powder. Mix until a soft dough forms.
Step 3: Shape the Knots
Divide the dough into 8–10 portions. Roll each portion gently into a short rope, then tie it into a simple knot. Place the knots on the prepared baking sheet, leaving a little space between them.
Step 4: Add the Garlic Butter
Mix the melted butter with the chopped parsley. Brush the mixture generously over each knot.
Step 5: Add Cheese
Sprinkle the mozzarella or Parmesan over the tops if using.
Step 6: Bake
Bake for 18–22 minutes, or until the knots are puffed and lightly golden.
Step 7: Finish & Serve
Brush with a little more garlic butter immediately after baking if desired. Let cool for a few minutes, then serve warm.
Notes
• If the dough feels sticky, let it rest for 2–3 minutes before shaping.
• Avoid adding too much extra flour, as this can make the knots dense.
• Make the ropes fairly short and thick so they don’t break when tying.
• Add Italian seasoning or a pinch of red pepper flakes for extra flavor.
• Serve with warm marinara sauce for dipping.
• Store leftovers in the refrigerator for up to 3 days and reheat before serving.
