Description
These garlic rolls deliver big flavor with minimal carbs thanks to almond flour and a clever cheese dough. Ready in under an hour, they’re perfect as dinner rolls, snacks, or breakfast sandwiches.
Ingredients
- 3 cups (339 g) pre-shredded low-moisture part-skim mozzarella cheese
- 6 tbsp (75 g) small-curd 4% cottage cheese
- 2 1/4 cups (228 g) superfine blanched almond flour
- 4 large eggs, divided (3 for dough, 1 for egg wash)
- 1 tsp garlic powder
- 1/2 tsp onion powder (optional)
- 1/2 tsp dried rosemary or Italian herbs (optional)
- 1/4 tsp salt
Instructions
- Preheat oven to 375 °F and line a baking sheet with parchment paper.
- In a microwave-safe bowl, melt mozzarella and cottage cheese in 30-second bursts until smooth.
- Stir in almond flour, garlic powder, onion powder, rosemary, salt, and three eggs until a soft dough forms.
- Divide dough into 12 portions and roll into smooth balls; place 2 inches apart on the sheet.
- Beat remaining egg with 1 tsp water and brush tops for shine.
- Bake 18–22 minutes until deep golden; cool 5 minutes before serving.
Notes
For extra garlic flavor, brush warm rolls with melted butter mixed with 1/4 tsp garlic powder. Store leftovers in an airtight container up to 2 days or freeze for 3 months.
