Description

Oven-baked cordon bleu rolls stuffed with cottage cheese, turkey ham, and Swiss—no frying needed.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 lb total)
  • 1 cup low-fat cottage cheese, drained
  • 4 slices low-sodium turkey ham
  • ½ cup shredded Swiss cheese
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • ½ cup whole-wheat panko breadcrumbs
  • 1 Tbsp olive oil
  • ½ tsp Italian seasoning
  • Cooking spray


Instructions

  1. Preheat oven to 400 °F and line a baking sheet with parchment paper.
  2. Slice each chicken breast horizontally to create six thin cutlets; pound gently to ½-inch thickness.
  3. Mix drained cottage cheese, Dijon, garlic powder, paprika, and pepper in a bowl.
  4. Lay one slice of turkey ham on each cutlet, spread 2 Tbsp cheese mixture, and sprinkle 1 Tbsp Swiss.
  5. Roll tightly, secure with toothpicks if needed, then brush lightly with olive oil.
  6. Combine panko, Italian seasoning, and remaining oil; press mixture onto each roll.
  7. Bake 20–22 minutes until internal temperature reaches 165 °F; rest 5 minutes before serving.

Notes

Drain cottage cheese well to prevent leaks. Leftovers reheat best in a 350 °F oven for 12 minutes.
