Description
Oven-baked cordon bleu rolls stuffed with cottage cheese, turkey ham, and Swiss—no frying needed.
Ingredients
- 2 large boneless, skinless chicken breasts (about 1 lb total)
- 1 cup low-fat cottage cheese, drained
- 4 slices low-sodium turkey ham
- ½ cup shredded Swiss cheese
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp black pepper
- ½ cup whole-wheat panko breadcrumbs
- 1 Tbsp olive oil
- ½ tsp Italian seasoning
- Cooking spray
Instructions
- Preheat oven to 400 °F and line a baking sheet with parchment paper.
- Slice each chicken breast horizontally to create six thin cutlets; pound gently to ½-inch thickness.
- Mix drained cottage cheese, Dijon, garlic powder, paprika, and pepper in a bowl.
- Lay one slice of turkey ham on each cutlet, spread 2 Tbsp cheese mixture, and sprinkle 1 Tbsp Swiss.
- Roll tightly, secure with toothpicks if needed, then brush lightly with olive oil.
- Combine panko, Italian seasoning, and remaining oil; press mixture onto each roll.
- Bake 20–22 minutes until internal temperature reaches 165 °F; rest 5 minutes before serving.
Notes
Drain cottage cheese well to prevent leaks. Leftovers reheat best in a 350 °F oven for 12 minutes.
