Description

Naturally sweetened apple, raisin & oat muffins with no added sugar or flour—only 95 calories each.


Ingredients

  • 1 medium apple, grated (with skin)
  • 1 ripe banana, mashed
  • 2 large eggs
  • 1 cup rolled oats
  • 1/3 cup raisins
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract (optional)


Instructions

  1. Preheat oven to 350 °F. Grease or line a mini muffin tray.
  2. In a bowl, mix mashed banana, eggs, and vanilla until smooth.
  3. Stir in the grated apple.
  4. Add oats, cinnamon, baking powder, and raisins; mix until combined.
  5. Spoon batter into muffin cups, filling each 3/4 full.
  6. Bake 18–20 minutes until a toothpick comes out clean.
  7. Cool 5 minutes in the pan, then transfer to a rack.

Notes

Store in an airtight container in the fridge up to 4 days or freeze up to 3 months. Reheat briefly before serving.
