Description

Protein-packed oatmeal cups made with blended cottage cheese, hearty oats, and sweet mixed berries. Perfect for meal prep and grab-and-go breakfasts.


Ingredients

  • 2 cups cottage cheese
  • 1 1/2 cups rolled oats
  • 1 cup mixed berries
  • 2 eggs
  • 1/3 cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla


Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
  2. Blend the cottage cheese, eggs, maple syrup, and vanilla until smooth.
  3. In a bowl, stir together the rolled oats and cinnamon, then pour in the blended mixture and stir well.
  4. Fold in most of the mixed berries.
  5. Divide the batter between the muffin cups and top each with a few reserved berries.
  6. Bake 22-25 minutes, until set and lightly golden.
  7. Cool 10 minutes before removing from the tin.

Notes

Let the oatmeal cups cool fully so they hold together. Blend the cottage cheese smooth for the best texture. Store in the fridge up to 4 days or freeze and reheat. Great warm or cold.
