Description
Gooey, soft, and protein-rich pancake bites made with cottage cheese and mini chocolate chips. Ready in just 12 minutes!
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1 cup oat flour (or finely blended oats)
- 1 tsp baking powder
- ¼ cup mini chocolate chips (dark or semi-sweet)
- Cooking spray or a little oil
Instructions
- Add cottage cheese, eggs, honey, and vanilla to a blender. Blend until smooth and creamy.
- Pour into a bowl, stir in oat flour and baking powder until combined. Fold in mini chocolate chips.
- Grease a silicone muffin mold or mini muffin tin. Fill each cavity ¾ full.
- Air Fryer: Cook at 350°F for 10–12 minutes. Oven: Bake at 350°F for 15–18 minutes.
- Let cool slightly before removing. Enjoy warm or chilled.
Notes
Use sugar-free chocolate chips for a lower sugar version. Store in the fridge up to 4 days or freeze up to 1 month. Reheat in the air fryer or microwave for that melty chocolate goodness.
