Description

A safe-to-eat, high-protein cookie dough made with blended cottage cheese and almond flour. Ready in 10 minutes.


Ingredients

  • 1 cup (225 g) cottage cheese, blended super smooth
  • 1/2 cup (50 g) almond flour
  • 2 tbsp monk fruit sweetener or 1 tbsp honey
  • 1 tsp vanilla extract
  • 2 tbsp (20 g) sugar-free mini chocolate chips
  • 1 tbsp peanut butter (optional)
  • Pinch of salt


Instructions

  1. Blend cottage cheese in a high-speed blender for 60 seconds, scrape sides, and blend again until completely smooth with no curds.
  2. In a mixing bowl, combine the blended cottage cheese, almond flour, sweetener, vanilla, salt, and optional peanut butter. Stir until a thick dough forms. Add 1 tsp milk only if needed.
  3. Fold in the sugar-free chocolate chips until evenly distributed.
  4. Chill the dough in the fridge for 15 minutes to firm up and allow flavors to meld.
  5. Scoop with a small cookie scoop and enjoy. Store leftovers in the fridge up to 4 days.

Notes

For best texture, serve straight from the fridge. Adjust sweetness to taste before chilling.
