Description

Creamy, garlicky, high protein spinach bake made with cottage cheese and eggs. No blender needed.


Ingredients

  • 8-12 oz fresh spinach or 1 thawed box frozen chopped spinach
  • 2 large eggs
  • 1 cup cottage cheese (4% or 2%)
  • 1/4 tsp Italian seasoning
  • 1/8 tsp garlic salt (optional)
  • 1/4 tsp black pepper
  • 1/4 cup shredded cheddar or Swiss cheese
  • 1 pinch sesame or nigella seeds


Instructions

  1. Preheat oven to 350°F and lightly grease an 8×8-inch baking dish.
  2. Prepare spinach: wash and chop fresh or thaw and drain frozen completely.
  3. Whisk eggs in a large bowl, then add cottage cheese and seasonings.
  4. Fold prepared spinach into the mixture until evenly distributed.
  5. Pour into baking dish, top with shredded cheese and seeds.
  6. Bake 28-30 minutes until edges are golden and center is set.
  7. Rest 5 minutes before slicing and serving.

Notes

Squeeze spinach very dry to avoid a watery bake. Let rest after baking for clean slices. Leftovers keep 4 days in the fridge.
