Description

A high-protein oatmeal bake loaded with mixed berries and creamy cottage cheese. Perfect for meal prep and naturally sweetened with maple syrup.


Ingredients

  • 2 cups cottage cheese
  • 1 1/2 cups rolled oats
  • 1 1/2 cups mixed berries, frozen
  • 2 eggs
  • 1/3 cup maple syrup
  • 1 tsp lemon juice


Instructions

  1. Preheat the oven to 350 °F (175 °C). Grease an 8-inch baking dish.
  2. Blend cottage cheese, eggs, maple syrup, and lemon juice until smooth.
  3. Stir rolled oats into the blended mixture.
  4. Fold in most of the frozen berries, saving some for the top.
  5. Pour into the dish and scatter reserved berries over the surface.
  6. Bake 35–40 minutes until set and golden at the edges.
  7. Cool 10 minutes before serving.

Notes

Use frozen berries straight from the freezer to prevent excess juice. Leftovers keep up to 4 days in the fridge.
