Description

A light, fluffy single-serve mug cake made with yogurt, oats, and fresh blueberries—ready in seven minutes.

Ingredients

  • 4 tablespoons ground oats
  • 1 large egg
  • 3 tablespoons plain unsweetened yogurt
  • 2 tablespoons milk
  • 1/4 cup fresh or frozen blueberries
  • 1 teaspoon honey or preferred sweetener
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon lemon zest (optional)

Instructions

  1. In a large mug, whisk together the egg, yogurt, milk, and honey until smooth.
  2. Add the ground oats, baking powder, and lemon zest; stir until no dry streaks remain.
  3. Gently fold in the blueberries.
  4. Microwave on high for 2–3 minutes until the cake rises and the top springs back when touched.
  5. Let cool 1 minute, then enjoy straight from the mug.

Notes

Use a 12-oz or larger mug to prevent overflow. Microwave times vary; start with 2 minutes and add 15-second bursts as needed.
